3/4 cup golden raisins
3/4 cup white wine
10 oz Mrs. Weiss'® Wide Egg Noodles
2 Tbsps butter
1 cup almonds, chopped
1 cup sugar
2 tsps ground cinnamon
2 tsps ground nutmeg
1 cup cottage cheese
eggs, separated
1 cup sour cream

Cooking Directions:

1. In a small bowl, soak raisins in wine 15 minutes.  Meanwhile, prepare noodles according to package directions 7 minutes; drain. Toss noodles with butter.

2. Preheat oven to 350° F.  

3. Add almonds, sugar, cinnamon and nutmeg to raisin mixture; set aside.

4. Puree cottage cheese; set aside.

5. In a small bowl, beat egg yolks.  

6.  In a medium bowl, beat egg whites until stiff peaks form.

7. In a large bowl, gently stir together cooked noodles, egg yolks, egg whites, sour cream, pureed cottage cheese and raisin mixture.  Pour mixture into 2 quart casserole. 

8. Bake 40 minutes or until pudding is firm in center. Serve warm.
